Tasting Notes:
This classically-styled Pinot Noir from the beautiful, certified organic Donnachadh Vineyard presents a rich aroma of sage, bing cherry and allspice, derived from the clay-rich soil. Its garnet color is translucent in the glass, allowing sunlight to pass through like a stained glass window at the Catedral del Buen Pastor in San Sebastián. On the tongue, the flavors come alive, tingling and coating the palate, leading to a wonderful drawn-out, silky finish. This wine is enjoyable with cheeses, charcuterie, salmon, pork, lamb, and other lighter meat dishes, as well on its own.
